Astakos Seafood

Our seafood is sourced through Astakos, a providore built on long-standing relationships with some of Australia’s most respected fishers and suppliers. With a focus on premium, sustainably sourced seafood, Astakos operates with a deep understanding of seasonality, provenance, and handling, ensuring each product arrives with its integrity fully intact.

Working closely with award-recognised fishmongers and industry leaders, Astakos maintains an uncompromising standard when it comes to freshness and quality. Their approach prioritises minimal intervention, careful handling, and direct sourcing, allowing the natural characteristics of each species to speak for themselves.

Their consistency and transparency allow for greater control in the kitchen, where technique and timing are critical. Grassland Poultry

Grassland Poultry reflects a commitment to ethical, free-range farming and meticulous care throughout the entire lifecycle of the bird. Raised in open environments with a focus on animal welfare, their poultry develops a more natural texture and depth of flavour compared to conventional sourcing. This results in cleaner, more structured broths and proteins that hold integrity through slow cooking processes.

Great Ocean Duck

Great Ocean Duck is sourced for its exceptional quality, raised with care in a natural environment that prioritises both welfare and flavour development. The result is a duck with a rich, clean profile, well-balanced fat content, and a depth that lends itself to more refined preparation.

Its structure makes it particularly suited to techniques such as dry ageing, where flavour is concentrated and texture is enhanced over time. This process allows for a more nuanced and elevated result, bringing forward subtle complexities while maintaining balance.

Minaki Saki

Our sake selection, including Minaki, is chosen with the same philosophy that guides our kitchen, precision, balance, and respect for craft. Minaki represents a modern expression of sake, grounded in traditional Japanese brewing techniques and defined by clarity, elegance, and restraint.

Produced in limited quantities and supplied exclusively to leading and Michelin-starred restaurants, Minaki reflects a standard of quality reserved for the highest levels of dining. Crafted using carefully selected rice, pure water, and a refined fermentation process, it offers a clean, structured profile with subtle aromatics and a quiet, evolving complexity.

Handmade Noodles

Our noodles are made in-house daily, crafted with precision and discipline. Every element, flour selection, hydration, mineral balance, texture, and bite, is carefully controlled to ensure harmony with the broth. Even subtle variations are considered, allowing the noodles to respond to different styles of soup with intention and balance.

The process is both technical and intuitive, shaped by time, temperature, and touch. Dough is rested, rolled, and cut with care, developing structure and elasticity that gives each strand its character.
